Last night, we were watching River Cottage where the guests to the farm were building a pizza oven then making their own pizzas. They looked absolutely scrummy and put us right in the mood for doughy pizza. All of us apart from Madge who has an intolerance to bread, pastry, stuffing, wheat, gluten. In other words, all the yummy scrummy grub which is totally bad for you.
Undaunted, I searched through the cupboard looking for his special flour made by Laucke. I used to be able to buy this at Lakeland but it doesn't seem to be on their website anymore.
Anway, I made his pizza base, part cooked it in the oven, brought it out, smothered it with tomato sauce, barbeque chicken, tomatoes, ham, and mozzarella cheese then bunged it back in the oven.
15 minutes later, it was done and it looked delicious. Proof is in the tasting and he scoffed the whole lot, ending with a "I'm a stuffed crust" comment when he'd finished.
Total success and an addition to the packed lunch list. Cold pizza when you're starving??? Magic!
